How To Make A Quick Vegetarian Sausage Skillet Meal?
YUM!! This is a great family meal enjoyed by both parents and kids. You have the rich flavor of a good pasta sauce without the actual sugar from the carbs of the pasta itself. So, if the you are craving pasta sauce without the pasta and animal meat, you’ve hit the jack pot with this one. I highly recommend the Field House brand for the sausage. Eggs and Sausage Vegetarian Skillet Meal
1 Tblsp. Coconut Oil
1 Lbs. Field House Vegan Sausage in Italian or Sage Flavor
1 small cut onion, chopped
5 ounces ciabatta bread, cubed (about 5-6 cups)
2 cups marinara sauce
1 cup of Provolone cheese
3/4 tomato paste
1/4 cup shredded parmesan cheese
1/2 cup fresh basil, torn
4 large eggs
Salt, lemon pepper and Lawry’s seasoning salt to taste.
- Heat th oil in large iron cast skillet over medium-high heat. Add the sausage, cook stirring frequently until browned and almost cooked through, about 5 to 6 minutes. Add chopped onion and cook until soften and golden about another 3 minutes.
- Stir the bread into the sausage and 2 cups of water; bring to a simmer. Reduce the heat to medium. Stir in the provolone cheese. and add 1/2 cup of basil.
- Use the back of spoon make shallow well in the tomato mixture; carefully crack egg into the well. Alternately, you can fully cook the eggs over hard and place into the well. Sprinkle with the remaining 2 tablespoons of parmesan and remaining 1/2 cup of basil. Season with salt and pepper.
